Lemon Meringue Pie
BOB HOPE’S LEMON MERINGUE PIE | |
1 c. sugar 3 tsp. cornstarch 1 c. boiling water 4 eggs, beat yolks 2 tsp. butter 1/4 c. lemon juice 1 tsp. grated lemon rind Pinch of salt Combine sugar and cornstarch, mix, add water slowly stirring until mixture is thick and smooth. Add beaten egg yolks, butter and lemon juice, grated lemon rind and a pinch of salt. Cook 2 or 3 minutes. Pour into 9-inch baked pie shell. Make meringue with egg whites, adding 8 tablespoons sugar as they are beating. Bake at 325 degrees for 15 or 20 minutes until golden brown. |
